I love baking all year round but there is something even nicer about doing it during the festive season. Everything just feels so much cosier and exciting plus there are lots of family occasions that can require baked goods. Last week, I needed something to take to my best friends Christmas housewarming and decided to bake something that included Terry’s Chocolate Orange. Not only do they sing Christmas for me (despite being available all year round…), my best friend adores them. I’ve made a Chocolate Orange cheesecake before but I wanted something our friends could easily grab in between catching up with each other so settled on cookies.

This easy recipe produces soft, squidgy cookies with literally the perfect amount of chocolate and orange. As with most of my recipes, these are quick to make and I can promise you they won’t last long so make plenty!

I have an immense love of chocolate so you can imagine how excited I get when it comes to Easter! With so many delicious ingredients to play with, it’s one of my favourite times of the year to bake and this years creation is pretty much lots of my favourite things combined in an incredibly easy fridge cake! The great thing about Rocky Road is it can literally be anything you want it to. I potentially went a bit overboard with my recipe as mine contains biscuit, peanuts, marshmallows, Cadbury Mini Eggs and Galaxy Caramel Eggs. I know, I know – but trust me, it just worked! My favourite part is definitely the caramel eggs as I love the gooeyness amongst the crunch of the biscuits and peanuts. If your attending any Easter get togethers these will look great stacked up on the plate or even if you’re not, they won’t last long in your house!

Triple Chocolate Smartie Cookie

Considering they one of my favourite things to bake, I can’t quite believe that I’ve never included a cookie recipie on Musings & More. When in New York, I had an incredible M&M cookie (see here) that I loved so much that I desperately wanted to recreate. So here’s my attempt for your enjoyment! I’d actually go as far as saying it’s even better than the original as there’s 3x the amount of chocolate (it is me after all)! These babies are so quick to make that you could easily whip up a batch the night before work or when you just fancy something (very) sweet. I went with M&Ms but there are so many different combinations you could make these cookies you’re own: salted caramel, peanut butter cups, smarties…the list is endless. Enjoy!

I definitely haven’t done nearly enough baking this Christmas. I feel like the festive period is usually fairly leisurely but this year it seems like I’ve been busy non-stop and unfortunately baking has taken a back seat! I have, however, managed to squeeze in one particularly delicious recipe you can whip up in minutes. If you read my post last week, you might remember me mentioning Lakeland’s Candy Cane bark. I loved it so much that I decided to recreate it myself because let’s be honest, not only is it much cheaper but it’s so easy there’s no excuse not to make some! With a hint of peppermint, the creamy chocolate works so well with the crunchy candy cane to create a sweet treat nobody can resist! So what are you waiting for?

It’s cold and miserable in England right now and you know what makes me feel better about that? FOOD! Preferably food of the sweet variety. I love curling up with a mug of tea and one of these incredible brownies. A bold statement, but these are the best brownies I’ve ever tasted and I’m not just saying that because I made them. Upon trying one, my mum texted me demanding the recipe and my mother is a baking pro so that’s high praise indeed. They’re lightly crisp on the outside and oh so squidgy in the middle and packed with chocolate. Oh and don’t forget the sweet and salty caramel which will literally melt your soul. Fact.

These bad boys are super quick to whip up whether you just fancy a bit of comfort eating or want to impress friends and family. You can amend the recipe to suit what you fancy too, why not swap some the chocolate chunks for small marshmallows or pecans? Whatever you chose to do, don’t expect them to stay around for long…
