As a lover of all things unicorn, I decided my next bakes would be inspired by the mythical creatures. So here we have my Psychedelic Unicorn Bark which I think is a great gift for friends and family when wrapped up in cellophane or simply for snaffling when you’re feeling peckish. I haven’t baked shortbread for a long time so thought I’d give the classic recipe a try but with my own personal twist – dipped in chocolate and merrily sprinkled with joy sweetness. These are incredibly easy recipes and it’s likely you already have a lot of the ingredients in your house already. Now let’s get baking!

BAKING: Kinder Bueno Cupcakes

I can’t resist a good cupcake and frequently have to stop myself buying expensive ones in London, especially when I know I could make my own for a fraction of the price! I recently fell in love with Jane’s Patisserie blog and the vast array of gorgeous treats so decided to give one of her recipes her go. One of my very favourite chocolate bars are Kinder Buenos and realising I hadn’t actually baked with them before, it was decided that Kinder would be my hero product in this months recipe.

Gluten Free Christmas Baking


A lot of your really seemed to enjoy my previous Gluten Free baking post (here) so when I found out that Delicious Alchemy were bringing out a Christmas range, I knew that pulling together some yummy creations would make the perfect first post for December! To reiterate, I am not gluten intolerant but I know a lot of people who are and I firmly believe a few clever and simple changes can allow everyone to join in the fun.

GLUTEN FREE BAKING: CHOCOLATE BROWNIE FUDGE AND VICTORIA SPONGE CAKE

sponge_4I think we’ve all been guilty of using a package baking mixture. While I do always try and do every step myself, there is no denying that there is something really satisfying about being able to buy packets which will produce gooey chocolate chip cookies or fluffy cupcakes both quickly and easily. I really don’t think there is anything wrong with using these and the results are often just as delicious.

When Delicious Alchemy, a company who provide a wide range of gluten free products including baking mixes got in touch, I was raring to go. To make it clear, I am not gluten intolerant in any way, shape or form. I do however emphasise how rubbish it can be to find out your gluten intolerant or perhaps coeliac. Gluten is probably in most of the food I eat so I know I’d find it a struggle if it was me and I know people who are taking steps to remove gluten from their diets and who find it difficult. I think that is why I was so keen to do this post, I wanted to show that gluten free products can be cheap, easy and most of all tasty and Delicious Alchemy ticked all three boxes.

BAKING: NIGELLA’S CHOCOLATE TART

I’ve been making a lot of cakes recently and craved giving something else ago. I remembered seeing Nigella make a tart on one of her TV shows recently and as tarts are something I’d never ventured into before, I decided to give it a go! It was always going to be chocolate (I mean it is me!) and this one even has an Oreo crust, making it even more delicious! This is a great centrepiece for dinner and you can get lots of slices from it too. Dig in!
