CANDY CANE CHOCOLATE BARK

I definitely haven’t done nearly enough baking this Christmas. I feel like the festive period is usually fairly leisurely but this year it seems like I’ve been busy non-stop and unfortunately baking has taken a back seat! I have, however, managed to squeeze in one particularly delicious recipe you can whip up in minutes. If you read my post last week, you might remember me mentioning Lakeland’s Candy Cane bark. I loved it so much that I decided to recreate it myself because let’s be honest, not only is it much cheaper but it’s so easy there’s no excuse not to make some! With a hint of peppermint, the creamy chocolate works so well with the crunchy candy cane to create a sweet treat nobody can resist! So what are you waiting for?

Triple chocolate salted caramel brownies

It’s cold and miserable in England right now and you know what makes me feel better about that? FOOD! Preferably food of the sweet variety. I love curling up with a mug of tea and one of these incredible brownies. A bold statement, but these are the best brownies I’ve ever tasted and I’m not just saying that because I made them. Upon trying one, my mum texted me demanding the recipe and my mother is a baking pro so that’s high praise indeed. They’re lightly crisp on the outside and oh so squidgy in the middle and packed with chocolate. Oh and don’t forget the sweet and salty caramel which will literally melt your soul. Fact.

These bad boys are super quick to whip up whether you just fancy a bit of comfort eating or want to impress friends and family. You can amend the recipe to suit what you fancy too, why not swap some the chocolate chunks for small marshmallows or pecans? Whatever you chose to do, don’t expect them to stay around for long…

Oozy caramel cookie bars

To be perfectly honest with you, I very nearly didn’t post this recipe for my caramel cookie bars. It wasn’t because I didn’t thoroughly enjoy them (they were epic, FYI), but simply because they didn’t look as perfect as I’d imagined in my head. I’d wanted clean cut layers but because I hate making my own caramel and opted for a cheat version instead (sorry Mum…), the caramel didn’t set as well and I was left with gooey layers which spilled over the sides. I received only sheer enthusiasm from anyone who gobbled one but I guess I was looking at it from a purely aesthetic, bloggers view. Figures, huh? So I’ve posted these bad boys anyway, purely because if I don’t say so myself, they taste amazing. Naturally they’re not going to win any healthy eating awards but damn, they’re worth it.

BAKING: Terry’s Chocolate Orange cheesecake


It’s no secret that I love chocolate. Even though I do Slimming World, I always make sure that there is some form of chocolate in my daily diet. No, it’s not healthy but it’s so good. While I’m not actually a fan of the fruit version, I bloody love a Terry’s Chocolate Orange. It’s got a bit of a connotation as a Christmas chocolate for whatever reason but thankfully this baby is available all year round. Have you guessed what today’s baking post includes yet? My Chocolate Orange Cheesecake is super easy to make and if you take it along to family BBQ as I did, you’ll find the whole lot gone in one day. Yep, it’s that good.

Speedy dinners with Spicentice

I haven’t massively spoken about my weight loss on my blog as it’s one of those things that I’m unsure people would really be bothered about? It’s something I am toying with though so watch this space! Anyway, my whole attitude towards food has changed since I started following Slimming World with our daily meals being a huge part of that. We still love curries and pasta, roasts and burgers but I’ve just had to look into finding a way to make these healthier for us. And that’s where Spicentice comes in.
